The traditional bhallas are made by soaking urad dal and grinding it into a smooth batter. Small portions are fried until golden, then soaked in water to make them soft. Place the soft bhallas in whisked yogurt and top them with green chutney, tamarind chutney, roasted cumin powder, chilli powder, and a little chaat masala. Add pomegranate seeds or coriander for a colourful finishing touch.
