Appam Recipe

Method
Wash and soak the raw rice for around 4 to 5 hours. Drain
and blend it with cooked rice, grated coconut and enough water to make a smooth
batter.
Add yeast, sugar and a little salt. Mix well and allow the
batter to ferment in a warm place for several hours or overnight.
The batter should become slightly airy and develop a mild
fermented aroma.
Before cooking, adjust the consistency with water. It should
be thinner than dosa batter but not completely watery.
Heat an appachatti or small deep frying pan. Pour a ladleful
of batter into the centre and quickly rotate the pan so that the batter spreads
towards the edges.
Cover and cook until the centre is fluffy and cooked and the
edges are lightly crisp. There is usually no need to flip the appam.
Repeat with the remaining batter.

Method
Heat coconut oil in a saucepan and add cinnamon, cardamom
and cloves. Let them release their aroma.
Add the sliced onion, green chillies, ginger and curry
leaves. Sauté gently until the onion becomes soft without browning it.
Add the chopped vegetables, salt and thin coconut milk.
Cover and cook until the vegetables are tender.
Finally, add the thick coconut milk and simmer gently for a
couple of minutes. Avoid boiling it vigorously after adding the thick coconut
milk, as this can affect its creamy texture.
Taste and adjust the salt before serving.
How to Serve It
Serve freshly cooked appams warm with generous spoonfuls of
vegetable stew. Let the creamy curry collect in the soft centre of the appam
while the crisp edges soak up the coconut milk.
A little extra coconut oil and fresh curry leaves can add
