Kadhi Pakora: A Yoghurt-Based Curry with Fritters

Kadhi Pakora is a traditional North Indian dish that combines a creamy, tangy yoghurt-based curry with crispy gram flour fritters. This comforting delicacy is a staple in many households, often enjoyed with steamed rice or jeera rice. Ingredients

For the Kadhi:
●    2 cups yoghurt (preferably sour)
●    4 tbsp gram flour (besan)
●    4 cups water
●    1 tsp turmeric powder
●    1 tsp red chili powder
●    Salt to taste
●    1 tsp mustard seeds
●    1 tsp cumin seeds
●    2 dry red chilies
●    1 pinch asafoetida (hing)
●    10-12 curry leaves
●    2 tbsp oil or ghee
●    Fresh coriander leaves for garnish

For the Pakoras:
●    1 cup gram flour (besan)
●    1 small onion, finely chopped
●    2 green chilies, finely chopped
●    1 tsp ajwain (carom seeds)
●    1 tsp red chili powder
●    Salt to taste
●    Water (as needed)
●    Oil for deep frying

Instructions
Step 1: Prepare the Pakoras
1.    In a mixing bowl, add gram flour, chopped onions, green chilies, ajwain, red chili powder, and salt.
2.    Gradually add water to form a thick batter.
3.    Heat oil in a deep pan over medium heat.
4.    Drop small portions of the batter into the hot oil using your fingers or a spoon.
5.    Fry the pakoras until golden brown and crispy.
6.    Remove and drain excess oil using a paper towel.

Step 2: Prepare the Kadhi
1.    In a large bowl, whisk together yoghurt, gram flour, turmeric, red chili powder, and salt. Add water gradually to create a smooth mixture.
2.    Heat oil in a pan and add mustard seeds, cumin seeds, dry red chilies, curry leaves, and asafoetida.
3.    Once the seeds start to splutter, pour the yoghurt mixture into the pan.
4.    Cook on low-medium heat, stirring continuously to prevent curdling.
5.    Let it simmer for about 20-25 minutes until the kadhi thickens and the raw taste of gram flour disappears.

Step 3: Combine and Serve
1.    Add the fried pakoras to the kadhi and let them soak for a few minutes.
2.    Garnish with freshly chopped coriander leaves.
3.    Serve hot with steamed rice or jeera rice for a comforting meal.
