Fruit Tarts That Pair Perfectly with Tea

Ingredients You'll Need
For the pastry shells:

Prepare the Tart Dough
Start by combining the flour, powdered sugar and salt in a
bowl. Add the cold butter and rub it gently into the flour using your
fingertips until the mixture resembles coarse crumbs.
Add the egg yolk and mix. Gradually add cold water, a little
at a time, until the dough comes together.
Don't knead it too much. Overworking the dough can make the
pastry tough rather than delicate and crisp.
Wrap the dough and refrigerate it for about 20–30 minutes.
Bake the Tart Shells
Preheat your oven to 180°C.
Roll out the chilled dough on a lightly floured surface and
cut circles slightly larger than your tart moulds. Carefully press the dough
into the moulds and trim the edges.
Prick the base gently with a fork. This helps prevent the
pastry from puffing up while baking.
Bake for around 15–20 minutes, or until the shells
turn lightly golden. Let them cool completely before adding the filling.
Make the Creamy Filling
While the tart shells are cooling, prepare the filling.
Whip the cream with powdered sugar and vanilla until it
becomes light and fluffy. If you're using ready-made thick cream, simply whisk
it with the sugar and vanilla until smooth and creamy.
Don't make the filling too sweet. The natural sweetness and
slight tanginess of fresh fruit will provide plenty of flavour.
Assemble the Tarts
Once the pastry shells are completely cool, spoon the cream
filling into each one.
Arrange the fresh fruit over the cream. You can create a
simple pattern with alternating colours or pile the fruit casually for a more
homemade look.
For an extra glossy finish, lightly brush the fruit with a
little warmed apricot jam. This is optional but gives the tarts a beautiful
bakery-style appearance.
Tips for Perfect Fruit Tarts
Keep the butter cold when preparing the pastry. This helps
create a crisp, flaky texture.
Don't fill the tart shells too far in advance if you want
them to stay crisp. The moisture from the cream and fruit can gradually soften
the pastry.
Choose fruit that isn't overly watery, and pat freshly
washed fruit dry before placing it on the tarts.
If you're preparing them for guests, bake the shells earlier
and store them in an airtight container. Add the filling and fruit shortly
before serving.
