Lauki (bottle gourd) is one of the most underrated vegetables in Indian households, yet it holds immense nutritional value. Ingredients
For the dough:
●    2 cups whole wheat flour

●    1 tsp salt

●    Water as needed for kneading

●    1 tsp oil (optional)

For the stuffing:
●    1 cup grated lauki (bottle gourd)

●    1 finely chopped green chilli (optional)

●    1 tsp grated ginger

●    1/2 tsp cumin seeds

●    1/2 tsp ajwain (carom seeds)

●    1/2 tsp turmeric powder

●    1/2 tsp red chilli powder

●    Salt to taste

●    2 tbsp finely chopped coriander leaves

●    A pinch of garam masala (optional)

Other:
●    Ghee or oil for roasting


Instructions
Step 1: Prepare the Dough
1.    In a large bowl, add whole wheat flour and salt.

2.    Add water little by little and knead to form a soft, pliable dough.

3.    Cover and let it rest for 15–20 minutes.

Step 2: Prepare the Stuffing
1.    Squeeze the grated lauki lightly to remove excess water (but don't discard the water — it can be used in the dough or for curry).

2.    In a bowl, mix the grated lauki with cumin seeds, ajwain, turmeric, red chilli powder, chopped green chilli, ginger, salt, coriander, and garam masala.

3.    Mix well and keep aside. Do not let the mixture sit too long as it will release water.

Step 3: Assemble the Parathas
1.    Divide the dough into equal-sized balls.

2.    Roll one ball into a small circle. Place 1–2 tablespoons of the lauki mixture in the center.

3.    Carefully bring the edges together to seal and form a ball again.

4.    Dust with dry flour and gently roll it out into a flat circle, being cautious not to tear the paratha.

Step 4: Cook the Parathas
1.    Heat a tawa or flat pan on medium flame.

2.    Place the rolled paratha on the hot tawa.

3.    Cook for a few seconds, then flip. Apply ghee or oil on both sides and cook until golden brown spots appear.

4.    Repeat the process for the remaining dough and stuffing.
