Chhena Poda: Odisha Caramelised Cheese Dessert

Chhena Poda: Odisha Caramelised Cheese Dessert

Some Indian sweets are soft and syrupy, while others are crisp and flaky. Then there is Chhena Poda, a beautifully caramelised dessert from Odisha that stands apart from almost everything else. Made with fresh chhena, sugar, cardamom and nuts, this traditional sweet is baked until the outside develops a deep golden-brown crust while the centre stays soft, rich and slightly crumbly.

The name itself tells you what makes this dessert special. Chhena means fresh cottage cheese, while poda means burnt or baked. It is essentially a cheesecake with an unmistakably Indian character, and its smoky caramelised edges are the part that keeps people coming back for another slice.

What Makes Chhena Poda Special

Unlike many Indian sweets that depend on sugar syrup or ghee for richness, Chhena Poda gets much of its character from the baking process.

Fresh chhena is combined with sugar and flavourings before being baked slowly. As it cooks, the sugar caramelises and creates the distinctive dark crust. The longer it bakes, the deeper the colour and roasted flavour become.

Inside, the texture remains soft and dense, with a mild tang from the fresh cheese. Cardamom adds warmth, while cashews and raisins provide little bursts of texture.

It is traditionally associated with Odisha and is especially popular during celebrations and festivals.

Simple Chhena Poda Recipe

Ingredients

500 g fresh chhena or paneer ¾ cup sugar 2 tablespoons semolina ½ teaspoon cardamom powder 2 tablespoons chopped cashews 1 tablespoon raisins 2 tablespoons milk, if needed 1 tablespoon ghee

Method

Start by preparing the chhena. If using fresh homemade chhena, drain it well but keep it slightly moist. If using paneer, crumble it finely and knead it until it becomes smooth.

Add the sugar and knead the mixture thoroughly. This is an important step because you want the cheese and sugar to combine into a smooth, soft mixture rather than leaving large pieces of chhena.

Add the semolina, cardamom powder, cashews and raisins. Mix everything together. If the mixture feels too dry, add a little milk until it reaches a thick, smooth consistency.

Grease a round baking tin generously with ghee. Spread the chhena mixture evenly into the tin and smooth the surface.

Preheat your oven to around 180°C. Bake the mixture until the top becomes deep golden brown and caramelised. Depending on your oven and the depth of the mixture, this can take around 45 to 60 minutes.

Allow the Chhena Poda to cool before removing it from the tin. Slice it into wedges and serve.

The Secret Is in the Crust

The most tempting part of Chhena Poda is undoubtedly its crust. You want the top to become beautifully caramelised without burning it completely.

Dont worry if the surface becomes much darker than a regular cake. That deep colour is part of the desserts identity and contributes to its slightly smoky, roasted flavour.

For an even more traditional feel, some versions are baked or cooked in a way that gives the bottom and edges an especially rich caramelised layer.

How to Serve It

Chhena Poda is delicious on its own, particularly when served slightly warm. You can also serve it with a cup of tea or coffee for an afternoon treat.

For a more indulgent dessert, pair it with a small scoop of vanilla ice cream. The contrast between the warm, caramelised cheese cake and cold ice cream works surprisingly well.

However you serve it, avoid overwhelming the dessert with too many toppings. Its charm lies in the combination of simple ingredients and deep caramelised flavour.

A Dessert With a Story

Chhena Poda is more than another Indian sweet. It represents Odishas ability to turn humble ingredients into something memorable. Fresh cheese, sugar and a few pantry staples are transformed through slow baking into a dessert with a distinctive texture and flavour.

If you have never tried it before, dont expect a typical Indian mithai. Think of something between a baked cheesecake and a traditional cheese-based sweet, with caramelised edges and a gentle cardamom aroma.

That combination is exactly what makes Chhena Poda so special—and why this Odisha classic deserves a place on every Indian dessert lover's list.
