Cheese and Herb Crackers Made at Home

Ingredients

For about 25–30 crackers, you will need:

1 cup all-purpose flour ½ cup grated cheddar cheese 2 tablespoons cold butter 1 teaspoon dried oregano ½ teaspoon dried basil ¼ teaspoon garlic powder ¼ teaspoon black pepper Salt to taste 3–4 tablespoons cold water 1 tablespoon sesame seeds, optional

You can also use a combination of cheddar and parmesan for a sharper cheese flavor.

How to Make the Dough


Start by adding the flour, grated cheese, oregano, basil, garlic powder, black pepper, and a small amount of salt to a mixing bowl. Mix everything together so the seasonings are evenly distributed.

Add the cold butter and rub it into the flour mixture using your fingertips until it resembles coarse crumbs. This step helps give the crackers a pleasantly crisp texture.

Gradually add cold water, one tablespoon at a time, and bring the mixture together into a dough. Avoid adding too much water. The dough should hold together without becoming sticky.

Wrap the dough and refrigerate it for about 20–30 minutes. Chilling makes it easier to roll and helps the crackers hold their shape while baking.

Roll and Cut

Preheat your oven to 180°C.

Place the chilled dough between two sheets of baking paper and roll it out fairly thin. The thinner you roll it, the crispier the crackers will become.

Remove the top sheet and cut the dough into small squares, rectangles, or any shape you like. A pizza cutter works particularly well for making quick, even pieces.

Transfer the crackers to a lined baking tray. If you like, sprinkle a few sesame seeds or a little extra dried herbs over the top.

Prick each cracker once or twice with a fork. This helps prevent them from puffing up too much during baking.

Bake Until Crisp

Bake the crackers for around 12–16 minutes, or until the edges turn lightly golden. Keep an eye on them during the final few minutes because thin crackers can brown quickly.


Once baked, remove the tray and allow the crackers to cool completely. They will become crispier as they cool.

If the crackers aren't as crisp as you'd like, you can return them to the oven for a few extra minutes at a slightly lower temperature.

Make Them Your Own

The beauty of homemade crackers is that you can easily change the flavors. Add chilli flakes for a little heat, rosemary for a fragrant twist, or finely chopped fresh coriander for a different flavor.

You can also experiment with whole-wheat flour for a nuttier taste. Just remember that changing the flour may slightly alter the texture, so add water gradually.
