Ingredients

For Baati:
●    2 cups whole wheat flour
●    4 tbsp ghee (clarified butter)

●    ½ cup yellow moong dal (split green gram)
●    ½ cup chana dal (split chickpeas)
●    ½ cup toor dal (pigeon peas)
●    1 tomato, chopped
●    1 onion, chopped
●    2 green chilies, slit
●    1 tsp ginger-garlic paste
●    ½ tsp turmeric powder
●    1 tsp red chili powder
●    1 tsp cumin seeds
●    1 tsp mustard seeds
●    2-3 tbsp ghee
●    Salt to taste
●    Fresh coriander for garnish

For Churma:
●    1 cup whole wheat flour
●    2 tbsp semolina (sooji)
●    4-5 tbsp ghee
●    ½ cup powdered sugar
●    ¼ tsp cardamom powder
●    Nuts like almonds and pistachios (optional)

Step-by-Step Recipe
1. Preparing the Baati:
1.    In a large bowl, combine whole wheat flour, ajwain, ghee, and salt.
2.    Gradually add water to form a stiff dough. Let it rest for 10-15 minutes.
3.    Divide the dough into equal portions and shape them into round balls (baati).
4.    Preheat the oven to 180°C (350°F).
5.    Place the baatis on a baking tray and bake for 25-30 minutes or until golden brown.
6.    Once done, dip the baatis in ghee for extra flavor.

2. Making the Daal:
1.    Wash and soak all the lentils (moong dal, chana dal, and toor dal) for 30 minutes.
2.    Pressure cook the soaked lentils with salt and turmeric for 3-4 whistles until soft.
3.    In a pan, heat ghee, and add cumin seeds and mustard seeds. Let them splutter.
4.    Add chopped onions and sauté until golden brown.
5.    Add ginger-garlic paste, green chilies, and chopped tomatoes, and cook until soft.
6.    Stir in the red chili powder and cooked daal. Adjust the consistency by adding water.
7.    Simmer for 5-7 minutes. Garnish with fresh coriander.

3. Preparing the Churma:
1.    In a bowl, mix whole wheat flour, semolina, and ghee.
2.    Make a stiff dough by adding water and shape it into small flat discs.
3.    Cook these discs on a hot tawa (griddle) or bake until golden brown.
4.    Once done, crush the discs into a fine powder.
5.    Mix the powdered discs with sugar, cardamom powder, and some more ghee. Add chopped nuts if desired.

Serving Daal Baati Churma
