It is traditionally made in stone grinders (rubbu rolu), enhancing its earthy flavor.

Ingredients You’ll Need
●    Toor Dal (Kandi Pappu) – ½ cup

●    Urad Dal (Minapappu) – 2 tbsp

●    Tamarind – lemon-sized ball (soaked in warm water)

●    Green Chilies – 8-10 (adjust as per spice preference)

●    Garlic Cloves – 6-8

●    Salt – to taste

●    Oil – 4 tbsp (preferably sesame oil for authenticity)


Traditional Method of Preparation
Step 1: Roast the Dals
●    Heat oil in a heavy-bottomed pan.

●    Add Toor Dal and roast on a low flame until golden and aromatic.

●    Add Urad Dal and fry until both dals turn crispy.

Step 2: Fry Chilies and Garlic
●    In the same oil, fry green chilies and garlic cloves until slightly blistered.

●    Set aside to cool.

Step 3: Grind the Chutney
●    In a stone grinder or a mixer, add roasted dals, fried chilies, garlic, and soaked tamarind pulp.

●    Add salt and grind into a coarse paste. (Avoid adding water; if needed, just sprinkle a few drops.)

●    Mix in the remaining oil to preserve freshness.


How to Store
●    Transfer the chutney into an airtight glass jar.

●    Pour a thin layer of sesame oil on top.

●    This chutney stays fresh for up to 2 weeks when refrigerated.
