How to make delicious Thandai at home

Ingredients

1 and 1/2 litre full fat milk, 1 and 1/2 cups sugar, 20 almonds, 20 pistachios, 4 tbsp melon seeds, 1 tbsp chironji, 8 rose petals, 1/2 tsp khus khus(poppy seeds), 2 choti elaichi (green cardamom), 20 black peppercorns, 1 tsp fennel seeds/saunf, 1/2 tsp rose water, few strands of saffron

How to make

Soak chironji, khus khus, choti elaichi, black peppercorns and fennel seeds in water for 4-5 hours. Make a fine paste of all the ingredients in a mixer. Now take almonds, pistachios and melon seeds and grind them to fine powder. Add this wet paste to milk and mix them well. Now filter the whole milk through a cloth strainer. Add sugar and saffron strands in it and mix it well. Put it inside refrigerator for few hours. Pour thandai into glasses. Garnish thandai with dried fruits powder and rose petals. Serve it cold.
