Instructions:
1. Roasting Sesame Seeds
Begin by dry-roasting the sesame seeds on a medium flame. Keep stirring continuously to avoid burning. Roast till the seeds start popping slightly and turn golden. This usually takes around 4 to 5 minutes. Once roasted, transfer them to a plate and let them cool.
2. Preparing Jaggery Syrup
In a heavy-bottomed pan, heat one tablespoon of ghee. Add the jaggery and let it melt on low heat. Stir continuously until the jaggery melts completely. Cook for 2 to 3 minutes until you get a thick, sticky syrup. To check the consistency, drop a small amount in a bowl of water; if it forms a soft ball, the syrup is ready.
3. Mixing the Ladoo Mixture
Once the jaggery syrup is ready, turn off the heat. Immediately add the roasted sesame seeds and cardamom powder (if using). Mix everything thoroughly until the seeds are well-coated with the jaggery.
4. Shaping the Ladoos
Let the mixture cool slightly but not completely. While still warm, grease your palms with ghee and start shaping the mixture into small round ladoos. If the mixture hardens before shaping, gently warm it again for a few seconds.
