Delicious Homemade Veg Quesadilla Recipe

Ingredients:
For the filling:
●    1 tablespoon olive oil

●    1 small onion, finely chopped

●    1 small capsicum (green bell pepper), diced

●    1 small red bell pepper, diced

●    1 small yellow bell pepper, diced

●    1 medium tomato, deseeded and chopped

●    ½ cup sweet corn (boiled)

●    ½ cup paneer or tofu, crumbled (optional)

●    Salt to taste

●    ½ teaspoon black pepper

●    ½ teaspoon red chilli flakes

●    ½ teaspoon oregano or mixed herbs

●    1 teaspoon garlic (minced)

For assembly:
●    4 whole wheat or all-purpose flour tortillas

●    1 to 1½ cups shredded mozzarella or processed cheese

●    Butter or oil for cooking

Instructions:
1. Prepare the filling:
 In a pan, heat olive oil on medium flame. Add minced garlic and sauté until fragrant. Add the chopped onions and sauté until translucent. Now add all the bell peppers, tomato, and sweet corn. Stir-fry for 2-3 minutes until the vegetables soften but remain slightly crunchy. Add salt, pepper, chilli flakes, and herbs. Mix well. If you're using paneer or tofu, add it now and mix thoroughly. Turn off the heat and let it cool slightly.
2. Assemble the quesadillas:
 Place one tortilla on a flat surface. Spread a generous layer of the prepared veg filling on one half of the tortilla. Sprinkle a good amount of shredded cheese over the filling. Fold the tortilla in half to make a semi-circle. Press gently to seal.
3. Cook the quesadillas:
 Heat a non-stick pan or tawa on medium heat. Add a few drops of butter or oil. Place the folded quesadilla on the pan. Cook for 2-3 minutes on each side or until golden brown and crispy. The cheese inside should be melted.
4. Serve:
 Cut the quesadillas into wedges and serve hot with salsa, sour cream, or guacamole.
Tips:
●    You can add mushrooms, zucchini, or spinach for extra nutrition.

●    Use a grill pan for beautiful grill marks and extra crispiness.

●    For a spicy kick, add chopped green chillies or jalapeños.
