Ingredients
For the fritters:
●    2 cups finely shredded cabbage

●    1 small carrot, grated (optional)

●    2 tablespoons finely chopped spring onions

●    1 tablespoon finely chopped green chilies

●    2 tablespoons cornflour

●    2 tablespoons all-purpose flour (maida)

●    1 teaspoon ginger-garlic paste

●    Salt to taste

●    Pepper to taste

●    Oil for deep frying

For the Manchurian sauce:
●    1 tablespoon oil

●    1 tablespoon finely chopped garlic

●    1 tablespoon finely chopped ginger

●    2 tablespoons finely chopped spring onions (white part)

●    2 tablespoons finely chopped capsicum (optional)

●    2 tablespoons soy sauce

●    1 tablespoon red chili sauce

●    1 tablespoon tomato ketchup

●    1 teaspoon vinegar

●    1 teaspoon sugar

●    2 tablespoons water

●    Salt to taste

●    Spring onion greens for garnishing

Method
Preparing the Fritters
1.    In a large mixing bowl, combine shredded cabbage, carrot, spring onions, green chilies, cornflour, all-purpose flour, ginger-garlic paste, salt, and pepper.

2.    Mix everything well. The moisture from the cabbage will help bind the ingredients. If needed, sprinkle a little water to form a loose dough.

3.    Heat oil in a deep frying pan over medium heat.

4.    Take small portions of the mixture and drop them carefully into the hot oil.

5.    Fry until they turn golden brown and crispy. Remove and drain on absorbent paper.

Preparing the Sauce
1.    In a wok or wide pan, heat one tablespoon of oil.

2.    Add chopped garlic, ginger, and spring onion whites. Sauté on high flame for a few seconds.

3.    Add chopped capsicum, if using, and cook for a minute.

4.    Add soy sauce, red chili sauce, tomato ketchup, vinegar, sugar, and salt. Mix well.

5.    Add two tablespoons of water to adjust the consistency of the sauce.

6.    Allow the sauce to simmer for a minute.

Assembling the Cabbage Manchurian
1.    Add the fried cabbage fritters into the sauce and toss well to coat them evenly.

2.    Cook for another one to two minutes on high flame, stirring gently to avoid breaking the fritters.

3.    Garnish with chopped spring onion greens before serving.

Tips for the Best Cabbage Manchurian
●    Do not add too much water to the cabbage mixture; the cabbage naturally releases moisture.

●    Always fry the fritters on medium heat to ensure they are cooked through and crispy.

●    Serve immediately after tossing in the sauce to retain the crunchiness.

Cabbage Manchurian is best enjoyed hot, paired with fried rice, noodles, or simply as a standalone snack for your next gathering.
