Tadkewala Aloo ka Raita

Ingredients

Potatoes boiled, peeled and cut into 1 inch cubes-2 medium,Yogurt whisked-2 cups,
Oil- 2 tablespoons,Asafoetida-a pinch,Coriander seeds- 1 teaspoon,Dried red chillies-3,Green chillies finely chopped-1-2,Ginger finely chopped-1 tablespoon,Red chilli powder 1/4 tsp + for sprink, Roasted cumin powder 1/4 tsp + for sprink,Salt- to taste, Dried mango powder-1/4 teaspoon, Mustard seeds-
1 teaspoon.

Method

Heat oil in a non-stick pan. Add asafoetida, coriander seeds, mustard seeds, dried red chillies, green chillies and ginger and saute for a minute.
Add potatoes, mix well and saute till the potatoes are lightly browned.
Add One fourth  tsp red chilli powder, one fourth tsp roasted cumin powder and salt and mix well.
Add salt to the yogurt, mix and keep aside.
Transfer the potato mixture into a serving bowl. Add dried mango powder, one and half  cups yogurt and mix well. Spread the remaining yogurt on top.
Sprinkle red chilli powder and roasted cumin powder and serve chilled.
