Recipe to make Delicious Shahi Pulao

Ingredients
3 cups cooked long grain basmati rice/chawal, 1/4 tsp saffron strands /kesar, 2 tbsp ghee, 2 cloves/laung, 2 sticks cinnamon/dalchini, 3 cardamoms/elaichi, 1/2 tsp caraway seeds/shahjeera, 1 tsp cumin seeds/jeera, 1 tsp green chillies (finely chopped), 1 bayleaf/tejpatta, 1/2 cup sliced onions, 1 tsp chilli powder, 1/2 tsp turmeric powder/haldi, 1 cup paneer/cottage cheese (cubes), 1/4 cup  cauliflower florets (blanched),  3/4 cup  green peas (boiled), 2 tbsp  canned pineapple (chopped), salt to taste

For The Garnish
2 tbsp coriander/dhania (finely chopped), 1 tbsp cashewnuts/kaju (fried), 1 tbsp raisins/kismis (fried)

How to make
In a small bowl, make a mixture of saffron strands and 1tbsp warm water. Mix it well and keep aside. Now, in a deep pan heat ghee. Add cloves, cinnamon, cardamom, caraway seeds, cumin seeds, green chillies and bayleaf and fry on medium flame for a few seconds. Now add onions and cook for 2 to 3 minutes on medium flame. Add chilli powder, turmeric powder, paneer, cauliflower and green peas. Cook all ingredients on medium flame for 60 seconds. Now add pineapple, rice, saffron-water mixture and salt. Mix well and cook on medium flame for 2 minutes, while stirring occasionally. Shahi Pulao is ready to eat. Garnish with coriander, cashewnuts and raisins and serve immediately.
